Recipe: Pesto

What's better on a warm, Fall day than pesto? With the freshest basil and toasty pine nuts, nothing can top it!

Ingredients

  • 2 cups fresh basil (found at farmers markets, and natural foods stores)
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic
  • 2 tbsps toasted pine nuts
  • 1/2 cup grated parmesan
  • Pasta (linguini, spaghetti)

  1. Simply put the basil, garlic, oil, and pine nuts in a food processor and pulse it several times until it's all the ingredients have been processed.
  2. Add the grated parmesan and pulse a few more times.
  3. Serve on hot pasta for a great dinner.*

* Add 1 cup of shredded chicken for some additional protein. Or add to chilled pasta for a nice pasta salad.
